Whole Wheat Bhatura

Vegan chickpea masala or Chole is incomplete without Bhatura. A bhatura is a puffy, light, fried Indian bread, slightly sour in taste. Traditionally a Bhatura is made by fermenting the all purpose flour using yeast,or by adding yogurt. Yogurt or yeast contribute to the fluffiness and sour taste of Bhatura. To make a vegan version of Bhatura, I experimented using baking powder, baking soda, soda water, vegan yogurt and fruit salt. I tried using these ingredients individually as well as in combination. Use of fruit salt really worked as a magic giving sour taste as well as fluffiness to Bhatura. To make it healthier whole wheat flour is used.
