Vegan Fruit Custard is a delectable dessert with a combination of seasonal fruits and custard base. It has crunchiness of fresh fruits and creaminess of custard. This dessert is usually prepared using milk based custard. In this recipe. I have experimented making custard base using plant-based milk. It is a healthier option, really a quick and easy recipe and tastes just delicious!!
Ingredients:

| Almond Milk | 2 Cups |
| Corn Flour | 2 Tbsp |
| Organic Sugar | 3 Tbsp |
| Vanilla Extract | 1 Tsp |
| Apples Chopped | 2 Nos |
| Sliced Banana | 2 Nos |
| Grapes (Cut in to halves) | 10-12 Nos |
| Persimmon Chopped | 1 No |
| Frozen or Fresh Mango pulp | 2 Cups |
| Pomegranate | 1/4 Cup |
| Lightly Roasted nuts | 1/4 Cup |
Recipe
- In a small bowl, add 4-5 tbsp of Almond milk and add Corn flour to it
- Mix well and make a paste
- In an another pan, add rest of the Almond milk
- Heat almond milk in a pan on a medium flame
- keep stirring continuously
- Add Corn flour paste
- Add Sugar and cook till it thickens
- Add Vanilla extract
- Let it cool at room temperature for 30 min
- Refrigerate up to an hour
- After refrigeration, the custard base is ready
- Add Mango pulp, to the jelly like custard base
- Add fruits to the custard
- Garnish with Pomegranate and lightly roasted nuts (Adding nuts is optional)
Tips:
- Custard base can be made in advance and can be refrigerated for 2-3 days
- Add fruits at the time of serving
- Custard base can be made with different flavors by adding essence of choice
- Instead of Almond milk, any plant-based milk can be used
- You can use seasonal fruits or frozen fruits of your choice
