Pesto Sandwich is one of our favorite sandwiches. The best thing about these sandwiches is you can have them for lunch or dinner or pack them in your lunch box. It is a wholesome recipe, rich in Vitamin B12, Iron, antioxidants, omega-3 fatty acids. The recipe is very simple. It needs a few ingredients that are easily available in the pantry. I have already posted a simple recipe for making Basil Pesto Sauce. You can even make the sandwiches in advance and grill at the time of serving!!
Ingredients:

| Italian or french baguette/ sandwich bread | 4 Nos |
| Capsicum cut in juliennes | 1Cup |
| Bell peppers cut in juliennes | 1Cup |
| Onions cut in juliennes | 1 Cup |
| Baby Spinach | ½ Cup |
| Thin sliced -White button Mushrooms | ½ Cup |
| Lettuce- butter lettuce or iceberg lettuce | 1 Cup |
| Cherry Tomatoes | 6-8 |
| Garlic Powder | 1 tbsp |
| Black Pepper powder | 1 tsp |
| Salt | ½ tsp |
| Italian seasoning | 1 tbsp |
| Olive Oil | ½ tbsp |
| Pesto Sauce | ½ Cup |
Recipe:
- Add ½ tbsp of Olive oil in a grill pan
- Add sliced onions and cook for a minute
- Add bell peppers and saute for a minute
- Add mushrooms and cook for a minute
- Add Garlic powder, black pepper powder and Italian seasoning
- Saute veggies
- Just remember not to overcook veggies
- Keep the stuffing aside
- Make a slit on the baguette or sandwich bread lengthwise
- Apply olive oil with a brush and grill the inner side of the bread
- Apply Pesto sauce on the inner side of the bread
- Arrange lettuce leaves, baby spinach and grilled veggies
- Add cherry tomatoes and close the sandwich
- Grill the sandwich on a grill pan
- Serve hot
