The cake is everyone’s favorite dessert. When I was in school, the cake with Jam and desiccated coconut was my most favorite cake. This delectable cake with the jam and desiccated coconut will take you back to your school days!!
I have experimented with using doughnut molds to make small cakes. I have used cupcake molds too. The baking time varies with the type of mold used. Making these cakes is very easy and takes a few minutes.
Ingredients:

| Unbleached all-purpose flour | 1½ Cups |
| Granulated Sugar | ½ Cup |
| Vegetable Oil | ⅓ Cups |
| Lime juice | 2tbsp |
| Baking powder | 1 tsp |
| Baking Soda | ½ tsp |
| Salt | ¼ tsp |
| Vanilla Extract | 1 tsp |
| Water | ¾ Cup +2tbsp |
| Mixed Fruit jam | 4-5 tbsp |
| Desiccated Coconut | ¼ Cup |
| Cherries for garnishing | Optional |
Recipe:
- In a mixing bowl, add Sugar, Oil, lime juice, vanilla extract and ¼ Cup Water
- Add Unbleached all-purpose flour
- Add Baking powder, baking soda and Salt
- Mix all the ingredients gently
- Add ¼ Cup of water at a time to adjust the consistency
- Pre-heat the oven at 350-degree Fahrenheit or 180 Celsius
- Arrange the cupcake liners in cupcake molds
- Add the batter using Ice-cream scooper
- If you are using a donut mold, add the batter using a spoon
- Bake the cupcakes for 13-15 min at 350-degree Fahrenheit
- Batter in donut mold will take lesser time and will take about 8-9 min
- Bake the batter to get moist cupcakes with no crust
- Using a toothpick, check if the cake is baked
- If the toothpick comes out clean, the cake is baked perfectly
- Let the cupcakes cool down completely on a cooling rack
For making mixed fruit jam coating:
- Add 2 tbsp of water to a pan
- Add 4-5 tbsp of mixed-fruit jam
- Heat the mixture on a low flame for about 5 min
- When the mixture starts boiling, turn off the flame
- Let the mixture cool down
- Spread the jam on each cupcake
- You can roll the cupcake in jam mixture so that the cupcake is covered with jam mixture
- Sprinkle desiccated coconut on all cupcakes
- Garnish with a cherry which is optional
- Let the cupcakes sit for about 10-15 minutes before serving
