Lentil kebabs

Kebabs are also called kebabs. Kebabs are popular in mid-eastern countries. The most common method of preparing kebabs is by grilling. Traditionally, a variety of meat is marinated with spices and grilled to make kebabs. 

In this recipe, I have used vegetables and lentils to make kebabs with higher nutritional values. I have experimented with using an Air fryer to avoid frying. This is a healthier version of kebabs and kebabs taste so delicious. You can enjoy these kebabs as a party snack or a tea-time snack. You can use these kebabs as patties in a burger. 

The red lentils used in this recipe are low in calories and are a rich source of plant-based proteins, folic acid, zinc, iron, and fibers. The vegetables used to make these kebabs rich in fibers, Vitamin A, Vitamin C, and Vitamin K.

Ingredients:

Red Lentils 1½ Cups
Grated Carrots1 Cup
Finely chopped French beans1 Cup
Finely chopped Onion½ Cup
Finely chopped coriander1 Cup
Boiled grated potato1 Cup
Rice Flour½ Cup or as per needed
Ginger garlic paste2Tbsp
Garam masala 2 Tbsp
Red Chilli powder1 Tbsp
Oil 4 Tbsp
Salt1 Tbsp
Sugar1 Tsp
Lime juice 2 Tbsp

Recipe:

  • Wash the red lentils and soak for at least an hour
  • After soaking , strain the lentils to remove water
  • In a food processor, add red lentils
  • Grind to a smooth paste without adding water
  • Transfer the paste to a bowl
  • Heat a pan and add oil 
  • Add Ginger garlic paste and onion 
  • Saute for 2 min
  • Add grated carrot and finely chopped beans
  • Saute for 2 min
  • Add salt, sugar and garam masala powder
  • Let the mixture cool down 
  • Add vegetables to the lentil paste
  • Add boiled potatoes and lime juice
  • Mix all ingredients gently 
  • Add rice flour for binding 
  • Divide the mixture into small and flat patties 

If you are using an air fryer

  • Preheat the air fryer at 380 degree Fahrenheit for 2 min
  •  Air fry for 20 minutes
  • Turn the kebabs after 10 min 
  • If you are making the kebabs on stovetop, heat the griddle 
  • Add 2 tbsp of oil
  • Fry kebabs till they become golden brown 
  • Crispy kebabs are ready 
  • Serve them hot with Mint chutney
  • You can use the kebabs as  patties in your burger 

Tips:

  • For binding, you can use flattened rice(poha), Oats or Chickpea flour
  • Make sure there is no water in red lentils while grinding
  • You can use vegetables of your choice
  • Make sure the vegetables are finely chopped or grated
