Pad Thai noodles is a famous street food in Thailand. It has become popular all over the world. This recipe is prepared by using rice noodles and hence this recipe is gluten-free. Pad Thai noodles are very delicious and have four distinct tastes. These noodles are sweet, spicy, sour and salty in taste. In vegan version of this recipe, I have added lots of vegetables, tofu and a variety of sauces. The combination of these sauces makes the noodles extremely flavorful and authentic.
Ingredients:

| Spring Onion | ½ Cup |
| Cabbage | 1 Cup |
| Onion | 1 Cup |
| Broccoli | 1 Cup |
| Extra-firm Tofu | 2 Cups |
| Bean Sprouts | 1 Cup |
| Roasted crushed peanuts | ½ Cup |
| Basil leaves | ½ Cup |
| Oil | 2 Tbsp |
| Tamarind paste | 2 Tbsp |
| Maple syrup | 4 Tbsp |
| Soy sauce | 2 Tbsp |
| Sriracha sauce | 2 Tbsp |
| Salt | As per taste |
| Thai chili paste | 1 Tbsp |
| Lime | 4-5 wedges |
Recipe:
- Cut all the vegetables into juliens (long and thin slices)
- Soak the rice noodles with hot water
- Sprinkle salt on tofu and Fry till it becomes golden in color
- If you are preparing tofu in air fryer, set air fryer at 380 degree Fahrenheit and air fry for 12 min or till tofu becomes golden and crispy
- I have used air fryer
- If you are preparing tofu in a pan, add 2 tbsp of oil and on a low flame shallow fry tofu till it becomes golden in color
- Mix tamarind paste, sriracha sauce, soy sauce and maple syrup in a bowl
- Heat a wok on a high flame
- Add Oil
- Add carrots and saute for a minute
- Add all the vegetables one by one and cook on a high flame
- Pan fry all the ingredients
- Add fried tofu
- Strain the noodles and add to the vegetables
- If you want the noodles to be spicy, add Thai chili paste or finely chopped Thai red chili
- Mix everything well
- Add crushed basil leaves to the noodles
- Serve hot by adding a handful of bean sprouts , roasted crushed peanuts , a lime wedge and spring onion
Tips:
- Make sure to use extra-firm tofu
- Remove extra water content from tofu
- For noodles with sweeter taste, you can increase the quantity of maple syrup
- You can also add Chinese chives
