Vegan Brownies

Brownies are chocolate-flavored, square-shaped sweets baked with flour, egg, sugar, and cocoa powder. I love fudgy brownies. As I always prefer to include healthy ingredients, I have used Whole wheat flour in my brownie recipe. To make the brownies moist inside, there has to be an ingredient that has high moisture content. The secret ingredient in these brownies is Zucchini. Brownies baked using Zucchini are moist inside with chocolaty and fudgy taste. Zucchini has a high water content, high fiber content, vitamins, and minerals. After brownies are baked, you will not taste Zucchini at all!! 

Ingredients:

Grated Zucchini1½ Cups
Brown sugar¾ Cup 
Vegetable Oil¼ Cup
Dairy-free Chocolate chips ¼ Cup
Cocoa powder¼ Cup 
Baking soda1¼ Tsp
Salt ¼ tsp 
Vanilla extract 1 Tsp 

Recipe

  • Preheat the oven at 350 degree Fahrenheit
  • Line the 8 inch x 8 inch baking dish with parchment paper 
  • Mix whole wheat flour, salt, baking soda, cocoa powder and chocolate chips 
  • In another bowl mix oil and brown sugar 
  • Add dry ingredients 
  • Mix well
  • Add grated zucchini 
  • Mix all ingredients gently till zucchini leaves water 
  • The consistency of batter depends on the water content in zucchini 
  • It could be like a thick batter or a soft dough
  • Spread the mixture evenly in the baking dish
  • Bake the mixture at 350 degree Fahrenheit for 30 minutes
  • Make a toothpick test
  • If the toothpick comes out clear, the brownie is done
  • Fudgy brownies are ready
  • Let the mixture cool down completely on a cooling rack for at least 40 min 
  • Cut the brownies into equal squares
  • You can spread chocolate sauce or drizzle melted chocolate on the top of brownies

Tips:

  • Mix the ingredients gently till water released from zucchini binds the dry ingredients
  • If you like your brownies sweeter in taste, add 2 more tablespoons of sugar 
  • To retain its moisture, grate Zucchini at the time of mixing 
  • Make sure not to overbake the brownies
  • Over baking results in dry brownies instead of melting in mouth  and fudgy brownies
  • Do not rush to cut the brownies before they are cooled down completely
  • You can serve the brownies on a sizzler plate with hot chocolate sauce and vegan ice cream 
  • You can add walnuts or nuts of your choice
  • You can make this recipe, gluten-free by replacing whole wheat flour with powdered oats. I have also tried this recipe using a combination of powdered oats and whole wheat flour. (1 Cup powdered oats, ½ Cup of whole wheat powder and 1 Cup of Sugar)
