Burmese Khow Suey

Khow Suey is a delicious Burmese dish. It is a wholesome meal. Noodles are served with a flavorful coconut milk-based curry and vegetables. The flavors are enhanced by adding the condiments such as fried onions, chili flakes, fried garlic, and spring onion. This vegan version of Khow suey will become your favorite one-dish meal.

Ingredients

Chopped bell peppers1 Cup
Chopped beans1 Cup
Broccoli florets1 Cup
Fried Tofu 1 Cup
Spring onion1 Cup
SaltAs per taste
For making curry paste:
Chopped Onions1 Cup
Garlic cloves3-4
Ginger slices4-5
Lemongrass stems1 Tbsp
Turmeric powder1 Tsp
Coriander-Cumin powder1/2 Tbsp
Red chili powder1 Tbsp
For Serving:
Fried Onion½ Cup
Fried Garlic2 Tbsp
Crushed roasted peanuts4 Tbsp
Chopped Spring onion4 Tbsp
Chili flakes2 Tbsp
Lime wedges4-5

Recipe:

  • Make a fine paste with Onion, ginger and garlic
  • Heat a pan
  • Add 2 Tbsp of oil 
  • Add all the vegetables one by one 
  • Saute on a medium heat till they are half done
  • Do not overcook the vegetables
  • Transfer the vegetables in a plate
  • to the same pan ,add dry spices and onion paste 
  • Cook the mixture in oil till the raw smell of onion, ginger and garlic disappears
  • It will take about 8-10 minutes
  • Keep stirring the mixture continuously.
  • I have used a Dutch oven to cook the curry and hence it needs to be stirred continuously
  • Add sautéed vegetables to the curry paste
  • Add coconut milk to the curry paste and stir well 
  • Add 1/2 Cup of water if needed
  • Add jaggery, salt and tofu 
  • Coconut milk curry is ready to serve with the boiled noodles

For serving:

  • Arrange the condiments around the serving plate
  • Add boiled noodles to the plate
  • Pour curry on the noodles
  • Add condiments as per choice

Tips:

  • You can cut the vegetables and make the curry paste in advance and refrigerate them
  • You can also make the condiments in advance and store them in an air-tight container
  • Use the vegetables of your choice
  • Make sure the curry paste is cooked completely or else you will taste the raw onion and garlic 
  • You may add additional quantity of coconut milk 
  • Add the curry and condiments only at the time of serving
  • I have used air fryer to fry the onions, tofu and garlic (325 degrees Fahrenheit till they become golden brown in color
