Broccoli and almond soup is the creamiest soup I have ever had! This soup has a beautiful fresh green color and subtle flavors. Broccoli is rich in nutrients and almonds enhance the nutritional values of the soup. The soup is high in proteins, Iron, Folic acid, calcium and vitamins such as A, C and E. I have used the steaming method to cook broccoli in order to retain the nutrients. This is a quick and easy recipe to make this healthy and creamy soup.
Ingredients:

| Broccoli florets | 4 Cups |
| Almonds | ⅓ Cup |
| Chopped onions | ½ Cup |
| Chopped Broccoli stems | ½ Cup |
| Chopped garlic | 1 Tbsp |
| Olive oil | 1Tbsp |
| Black pepper powder | 1 Tbsp |
| Salt | As per taste |
| Sugar | 1 tsp |
| Water | 2 Cups |
| Plant-based milk (optional) | ½ Cup |
Recipe:
- Soak almonds in water for 4 hours or soak almonds in boiling water for 30 min
- Remove the peels
- Remove broccoli stems and separate the florets
- Wash broccoli and stems
- Steam broccoli in a steamer for 4 min
- Heat a pan and add 1 tbsp of Olive oil
- Add Onions, garlic and chopped broccoli stems
- Cook till the onions become translucent
- Add a cup of water
- Cover the pan and cook for 2-3 minutes
- Add almonds
- Cover and cook for 2 min
- Let the mixture cool down
- Make a smooth puree of broccoli and almond mixture
- In the same pan, add the puree
- Add water to adjust the consistency
- Heat the soup for a minute
- Add salt, sugar and pepper powder
- Add plant-based milk
- Broccoli- almond soup is ready to serve
Tips:
- Do not steam broccoli for more than 4-5 minutes
- You may also add 1 tsp of nutritional yeast if you like the cheesy flavor
- You may also add finely chopped celery
