Pineapple fried rice is a Thai flavored rice with sweet, spicy and tangy taste. Basil leaves enhance the aroma of this rice. Pineapple tastes really well ,when it is paired with chilies. This rice is a wholesome meal as it has lots of vegetables, sweet taste of Pineapple and spiciness of red chilies. This is one of my favorite rice recipes. The recipe is so simple, you can make it anytime, for Lunch, dinner or you can pack the rice in your lunchbox. I have used fresh Pineapple. If fresh Pineapple is not available, you can use the canned Pineapple.
Ingredients:

| Chopped Pineapple( fresh or canned) | 1 Cup |
| Chopped Onions | ½ Cup |
| Chopped Carrots | 1 Cup |
| Chopped beans | 1 Cup |
| Chopped Capsicum | ½ Cup |
| Chopped orange bell Peppers | ½ Cup |
| Basil leaves | 5-6 |
| Soy Sauce | 1 Tbsp |
| Salt | As per taste |
| Finely chopped garlic | 2 Tbsp |
| Coriander Powder | 1 Tbsp |
| Turmeric powder | ¼ Tsp |
| Black pepper powder | 1Tbsp |
| Finely chopped Thai Red chili | 2 Tbsp |
| Vegetable oil | 2 Tbsp |
| Roasted Cashew nuts | 3 Tbsp |
Recipe:
- Heat a wok
- Add oil
- Add chopped Garlic
- Add onions, beans, bell peppers and carrots
- Saute all vegetables on a high flame
- Add chopped Pineapple
- Cook vegetables for 2 minutes
- Add Soy sauce and spices
- Add Cashew nuts
- Stir well
- Add cooked rice
- Add Crushed basil leaves
- Add salt and black pepper powder
- Pineapple rice is ready to serve
- Serve hot with your favorite side dish
Tips:
- Cook rice in advance ( at least 2 hours or earlier)
- Let the rice cool down completely before using
- You may add vegetables of your choice
- You may add Tofu and mushrooms
- You may use Thai curry powder instead of making a spice mix
- I have used a long-grain rice, but you may also use Jasmine rice
- If you are using Jasmine rice, prepare the rice a day before using it
- If you do not want a spicy rice, replace fresh Thai red chili with red chili flakes
- Carve out Pineapple pieces and use the shell to serve the fried rice
