Mexican Bowl

Mexican bowl is a nutritious and Wholesome one-dish meal. This recipe is a combination of vegetables, beans, Avocado, and flavorful rice. The fun part of making a Mexican bowl is creating your own bowl. It is a great idea of making a Mexican bowl for the party as you can arrange everything in a buffet style and guests can make their own bowl. The best part is you can make almost all the elements ahead of time. I am sure you will love this healthy and delicious recipe.

Ingredients:

Chopped Cilantro½ Cup
Lime juice3 limes
Chopped Tomatoes3 Nos
Chopped Onions2 Nos
Capsicum Julienned1 No
Yellow bell pepper Julienned1 No
Sliced Mushroom 200 G 
Carrot Julienned2 Nos 
Ripe Avocados( halved and deseeded)3 Nos
Canned black beans 1 can 
Black pepper powder2 Tbsp
Taco seasoning 2-3 Tbsp
Olive Oil 2 Tbsp
SaltAs per taste
Lettuce2 Cups 
Corn chipsAs needed

Recipe:

For making Guacamole:

  • Mash Avocados and add ½ Cup of finely chopped Onions 
  • Add 2 tbsp of lime juice and salt as per taste
  • Add 1 Tbsp black pepper powder
  • Guacamole is ready 

For making Salsa:

  • Add chopped tomatoes to a bowl
  • Add chopped onions
  • Add black pepper powder
  • Add salt and 1 tbsp of lime juice
  • Add Chopped Cilantro 
  • Salsa is ready to serve

For Making Cilantro lime rice

  • Add ½ Cup of Cilantro to the cooked rice
  • Add 3 Tbsp of lime juice
  • Mix well and Cilantro Lime rice is ready 

For making Saute Vegetables:

  • Add a tablespoon of Olive oil to a pan 
  • Add carrots when the oil becomes hot
  • Saute carrots for a minute and Capsicum and yellow bell pepper
  • Saute the vegetables for 2 minutes 
  • Add Taco seasoning 
  • Add Mushrooms 
  • Cook for a minute and add salt 

For making beans

  • Strain and rinse the Canned black beans
  • Add ½ a tablespoon of taco seasoning 
  • Add a pinch of salt 

To assemble :

  • Arrange all elements on the table
  • Add  a spoonful of each element
  • Serve with the Corn Chips 

Tips:

  • You can prepare almost all elements in advance
  • To replace the Taco seasoning , add 1 tbsp of Cumin Powder, 1 tsp of Garlic powder, 1 tsp of Onion powder 1/2 tsp of chili powder and 1 tsp of Black pepper powder
  • To restore the color of Guacamole, refrigerate it and cover it with double layer of plastic wrap
