Corn and Spinach Patties

Corn patties are a famous party or a tea time snack. They are also called Makai patties.(makai means corn in Hindi) These patties are made with boiled and mashed potato crispy covering, stuffed with  corn mixture, flavored with Indian spices. These melt-in-mouth patties are prepared in India especially in monsoon. I have given a twist to this recipe by adding spinach in the filling. Spinach enhances the  nutrition of the recipe. I am sure even the kids will love these patties.

Ingredients:-

Boiled and mashed potatoes5-6 medium sized
Frozen or fresh corn 2 Cups
Chopped Spinach1 Cup
Crushed ginger and garlic2 Tbsp
Finely chopped chilies1 Tbsp
Turmeric powder½ tsp
Garam masala powder1 tbsp
Chopped Coriander½ Cup
SaltAs per taste
Sugar1 tsp
Lime juice½ lemon
Corn flour3-4 Tbsp
Vegetable oil2 Tbsp

Recipe:

For making the stuffing:

  • Heat a pan 
  • Add a tbsp of oil 
  • Add crushed ginger-garlic
  • Add chopped green chilies
  • Add chopped Spinach
  • Saute for a minute and coriander
  • Add corn 
  • Saute for a minute
  • Crush the corn with a masher
  • Add garam masala powder
  • Add salt and sugar
  • Mix all the spices
  • Turn off the gas 
  • Squeeze lemon juice
  • Transfer the mixture to a bowl
  • Let the mixture cool down completely

For making the outer cover:

  • In a mixing bowl, add mashed potatoes
  • Add salt, turmeric powder and corn flour 
  • Mix everything and knead with a hand to make a smooth dough
  • Make equal sized balls 
  • The above quantity makes around 12 Patties
  • Make a concavity in a potato covering
  • Stuff a tablespoon of corn and spinach stuffing in the  center 
  • Close the edges to make a flat patty
  • Heat a griddle on a medium flame
  • Spread two tablespoons of oil and shallow fry the patties on both sides till they become golden in color
  • Enjoy with Mint chutney and tomato ketchup

Tips:

  • Before mashing or grating potatoes, make sure they are cooled down 
  • If you are using fresh corn, allow them to cook for 5 more minutes
  • You may substitute Corn flour with Rice flour, Tapioca flour  or breadcrumbs 
  • You may also add finely chopped chilies or a teaspoon of chili powder to the outer covering
  • Make sure you keep the outer covering  thick at the bottom or else the stuffing will come out of the cover
  • Shallow fry the patties on low to medium heat in order to cook on both sides
  • With the help of a spatula and a fork , hold the patty vertical and roll the sides of on a griddle in order to cook it from the sides
  • You can make a batch of patties in advance and freeze it for a month in a zip lock bag or an airtight container
  • You may also use the air fryer to fry the patties
