This salad recipe is a perfect lunch or dinner recipe for hot summertime. This salad has crunchy vegetables and fresh juicy fruits. I have prepared salad dressing using fresh orange juice and that adds an extra fresh fruity flavor to the salad. Walnuts increase the nutritional values and crunchiness of the salad. Ingredients:

| Lettuce | 2 Cups |
| apples | 1 Medium sized |
| Mandarins | 2 |
| Orange juice | ⅓ Cup |
| Lime juice | ½ lime |
| Sweet peppers | 1 Cup |
| Black pepper powder | 1 tbsp |
| Salt | As per taste |
| Red wine vinegar | 1 tbsp |
| Extra-virgin olive oil | 2 tbsp |
| Walnuts | ¼ Cup |
Recipe
- In a small bowl, squeeze juice of lime
- Add orange juice, red wine vinegar and extra-virgin olive oil
- Add salt, black pepper powder and mix everything to make salad dressing
- In a salad bowl ,add spring mix, lettuce, apples, sweet peppers and mandarins
- Add walnuts
- Pour salad dressing and mix well
- Refrigerate the salad for 30 min and serve
Tips:
- You may add cucumbers, cherry tomatoes, baby spinach and fruits of your choice.
- Fruits like apples, pears and green grapes taste good in this salad
- You may also add seeds like Sunflower seeds
- You may use bottled orange juice but freshly squeezed juice tastes great!
