Chole or Chana masala is a popular Indian vegan curry. This curry is usually served with Bhatura, a puffy fried bread or Naan or Kulcha. This dish is cooked with homemade aromatic spice powders. This is a flavorful recipe packed with proteins. Many times this recipe is overpowered by the taste of onions, ginger and garlic. Here we will use these ingredients in small quantities and add dry masala powders to enhance the flavors and taste.

Ingredients

| Soaked chickpeas | 2 cups |
| Onions (small sized) | 2 Nos |
| Tomato | 1 No. |
| Cilantro | ¼ cup |
| Garlic cloves | 2Nos. |
| Ginger | ½ inch |
| Cumin seeds | 2tbsp |
| Roasted Cumin powder | 1tbsp |
| Turmeric powder | ½ tsp |
| Chilli powder | 1tbsp |
| Dried fenugreek (Kasuri methi) | 1 tbsp |
| Chole masala | 2 tbsp |
| Asafoetida | 1 tsp |
| oil | 4tbsp |
| salt | As per taste |
| Green chilies (for garnish) | 2 Nos. |
Recipe
- Add 2 cups of water to 2 cups of soaked chickpeas
- Pressure cook until 4 whistles, If you are using an instant pot, pressure cook for 14minutes. Wait till the pressure is released naturally
- Strain the chickpeas
- For making gravy, heat 1 tbsp oil in a pan
- Add cumin seeds, ginger,garlic,onion and tomato
- Saute well till you get a golden brown color
- After cooling ,grind this wet mixture in a blender to smooth paste
- Add 2 tbsp of oil in a pan
- Add roasted cumin powder, add wet mixture paste and saute for about 5 min.
- Add dry spice powders
- Add 2 cups of warm water
- In a bowl, mash 4 tbsp of cooked chickpeas
- Add these mashed chickpeas to gravy. This will make the gravy thicker.
- Add salt and cilantro. Cover with a lid and cook on a low flame for 10 min
- Serve hot with Bhatura or your choice of bread

Tips:
- Dry roast cumin seeds to a dark brown color and then make powder. This enhances the taste
- Soak chickpeas at least for 7-8 hours
- The water obtained after boiling chickpeas is Aquafaba.It can be used as an egg replacer in baking
