Vegan chickpea masala or Chole is incomplete without Bhatura. A bhatura is a puffy,light, fried Indian bread, slightly sour in taste. Traditionally a Bhatura is made by fermenting the all purpose flour using yeast,or by adding yogurt. Yogurt or yeast contribute to the fluffiness and sour taste of Bhatura. To make a vegan version of Bhatura, I experimented using baking powder, baking soda, soda water, vegan yogurt and fruit salt. I tried using these ingredients individually as well as in combination. Use of fruit salt really worked as a magic giving sour taste as well as fluffiness to Bhatura. To make it healthier whole wheat flour is used.

Ingredients

| Ingredients | Quantity |
| Whole wheat flour | 2 cups |
| Semolina | 2 tbsp |
| Baking powder | ½ tbsp |
| Fruit Salt (e.g.Eno) | ½ tsp |
| Salt | 1tsp |
| Water | ½-¾ cup |
| Oil for dough | 1tbsp |
| Oil for frying |
Recipe
- In a bowl, mix all dry ingredients
- Mix well with a spoon
- Slowly go on adding water and knead a dough
- The dough should be tight and soft but not hard
- Add a tbsp of oil to make it smooth
- Cover the dough with a damp kitchen towel
- Rest it for 30 min
- Make equal sized balls
- Roll into about 5 inch circles
- Fry them in hot oil to make puffy Bhatura
Tips:
- Roll bhaturas gently,thicker at the center and slightly thinner at the edge.
- Roll bhaturas just before frying
