Whole Wheat Coffee Walnut Cake

I am a big fan of coffee! My day starts with a cup of hot filtered coffee. The aroma of freshly brewed coffee is just awesome!! I tried baking a Chocolate cake with a twist adding coffee to it.

 To make it healthier I used whole wheat flour. It turned out really well. My mom always used to add nutmeg to coffee.  Nutmeg goes really well with coffee.  Instead of adding vanilla essence I tried adding nutmeg powder.

Ingredients

Whole wheat flour1 ½ Cups
Instant coffee powder1 tbsp
water1 Cup
Olive oil/refined oil½ Cup 
Freshly squeezed lime juice1 Lemon 
Sugar1 Cup
Cocoa Powder⅓ Cup
Walnut pieces¼ Cup
Baking powder½ tbsp
Baking soda1tsp
Salt ½ tsp
Nutmeg powder½ tbsp

Recipe

  • Preheat the oven at 350 degree Fahrenheit Or 180 degree Celcius  
  • Line the tin with parchment paper or grease with oil and dust some flour on it
  • In a small bowl, dissolve 1 tbsp  instant coffee powder with ½ cup of water
  • Mix a spoon of flour with walnut pieces
  • In a large mixing bowl, add sugar, coffee decoction,oil,lemon juice, nutmeg powder and cocoa powder. Stir well
  • Add baking powder, baking soda, salt and whole wheat flour
  • Gently mix  all the ingredients
  • Add water slowly to adjust the consistency of batter. The batter should not be runny or too thick
  • Transfer the batter to cake tin 
  • Bake the cake for about 35-40 minutes
  • After 35 min check the cake by inserting a toothpick
  • Remove from the oven and let it cool on a  cooling rack 
  • Cut into pieces when it is completely cooled
  • Enjoy with a cup of coffee or tea or  post dinner 

Tips:

  • Mix walnuts with flour to avoid walnuts from sinking at the bottom
  • You can replace lemon juice with a tbsp of white vinegar
  • Cut the cake only when it is cooled completely.
  • Do not over-mix the batter as it can form gluten
