Hara Bhara Paratha

Paratha is a popular Indian flatbread.  Plain wheat Paratha is served with Chole, dal, or curry. “Hara” means Green in color and “Bhara” means stuffed. The outer cover of this paratha is made by using whole wheat flour and Spinach. The stuffing has lots of veggies and flavorful spices. This paratha itself is a one-dish wholesome meal. You can have this paratha for Breakfast, lunch or dinner. I have posted a recipe for making a  delicious tomato pickle that goes really well with this paratha.

Ingredients:

Whole Wheat Flour3 Cups
Spinach Puree2 cups
SaltTo taste
Boiled and Grated Potatoes2Nos (small-sized)
Grated Carrots1 ½ Cups 
Grated Cauliflower1 ½ Cups 
Mashed Boiled green peas1 cup
Grated Ginger1 tbsp
Roasted Cumin powder1tbsp
Garam Masala Powder1tbsp
Finely Chopped Green Chillies1 tbsp
Oil4-5 tbsp

Recipe:

  • Boil water in a pan and add washed spinach leaves
  • Blanch Spinach and strain the water immediately
  • Give a cold water bath to Spinach
  • Blend to make a smooth puree
  • Add spinach puree slowly to whole wheat flour
  • Add ½ tsp of salt and knead a soft dough
  • Cover the dough and rest for 30 min
  • To make the stuffing, heat 1 tbsp of oil
  • Add grated cauliflower, grated ginger, grated carrot
  • Cook for 2 mins to reduce the water content in vegetables
  • Add boiled and mashed green peas
  • Mix well and add dry spices
  • Add boiled and grated potatoes and mix well
  • Add salt 
  • Adding chilies is completely optional
  • Transfer the mixture to a bowl
  • Let it cool 
  • Take a small portion of a dough and with fingers make a flat disc
  • Stuff the paratha with vegetable stuffing
  • Press the stuffing in the center and seal the edges
  • Sprinkle dry flour on the surface and roll into 5-6 inches circles
  • Heat a griddle 
  • Apply a teaspoon of oil and cook paratha
  • Serve hot with vegan Yoghurt or pickle

Tips:

  • The dough consistency should be soft. If the dough is very tight, the stuffing will not be evenly distributed
  • While cooking, make sure to reduce the water content of the vegetables
  • Roll the dough gently
