Vegan Pancakes

Making fluffy pancakes on a weekend is so much fun!! Pancake is a traditional breakfast recipe. It is easy to make the pancakes in a few minutes. Traditionally, Pancakes are made by adding flour, milk, sugar, and eggs. The recipe, I am sharing is vegan. My family loves pancakes. I always choose healthier ingredients. I have added Oats, whole wheat flour, plant-based milk, and flaxseed powder. These pancakes are fluffy, soft, and extremely delicious.  

Ingredients:

Ingredient Quantity
Whole wheat flour1 Cup
Powdered oats1 Cup
Flaxseed powder1 Tbsp
Dairy-free chocolate chips2 Tbsp
Vegan butter/ Coconut oil/ Vegetable oil 1 Tbsp
Plant-based milk1 ½  Cups
Organic sugar/Maple syrup4 Tbsp
Baking powder1 Tbsp
Vanilla extract1 Tbsp
Maple syrupAs needed
Strawberries/ Blueberries/ banana1 Cup

Recipe:

  • To a mixing bowl, add Whole wheat flour
  • Add Powdered oats
  • Add Sugar, baking powder and Flaxseed powder
  • Mix all dry ingredients 
  • Slowly add Plant-based milk to make the batter
  • Add vanilla extract and chocolate chips (optional)
  • Add a tablespoon of vegan butter/Coconut oil / Vegetable oil
  • The batter consistency should be like a cake batter 
  • Rest the batter for 15 minutes
  • Heat  a griddle on a low flame 
  • Add a spoonful of batter to make a pancake 
  • You will notice the bubbles in the batter
  • Add strawberries or blueberries on  top of the pancake or you can use them at the time of serving
  • Repeat the process of adding batter to make small pancakes
  • Flip each pancake when the bottom becomes golden in color
  • Serve hot pancakes with your favorite fruits and drizzle maple syrup on the top of pancake 

Tips:

  • Resting the batter is very important
  • Mix the ingredients gently 
  • Do not overmix the batter
  • You can serve pancakes with vegan chocolate spread, peanut butter and lots of fresh fruits
  • You can mix the dry ingredients and store in an air tight container or in a zip lock bag
  • You can also add cocoa powder to the dry ingredients
  • Yo can add ½  tablespoon of extra baking powder to make fluffier pancakes
